Meals on delayed Amtrak trains?

Dud anyone happen to learn what arrangements were made to restock diners on recently delayed trains such as 5 6 7 & 8 - Some years back on a late #5 - dinner was "hobo stew" ..gathering up what was available and feeding coach passengers free. Another late #5 stopped in Colfax waiting to intercept fast food and soda for all being sent up from Auburn.. What have you learned about supplying up to 3 extra meals on late trains? THX
