Three-Finger Jack, the cook. Didn't wee it happened by a trainman related a story about how late one night he dropped the fried eggs on the floor, and then scooped them up and threw them at a customer.
The only company run modules which were worth a darn were the ones in Dunsmuir. Sparks were barely trailers on blocks, the ones in RV were prefabs, as were the ones in KFS (I think). They were, however, a step or two above the typical Blue Rooms at the roundhouses.
ISTR the SP-owned beaneries were operated by the J. V. Moan Commissary Company, but they were a few years before my time.
