Tesla has recently been producing around 3500 cars a month, with production trending slowly upward. If they keep it up, they could reach the 5K/month target (500/day) by mid-fall, which would still be 1/2 of what NUMMI shipped. Though most NUMMI output went by train from the factory.
You're right about the traffic. 880 (trucks are prohibited on 580 south of 980) is heavily used and heavily congested all the time - long-term LOS F in spots. Also old (used to be SR17) with lots of construction zones. It's the main truck route into the Port of Oakland. But the number of trucks they're talking about here is way below the noise in daily variation. Do wonder if they are or will be using any of Tesla's electric tractors for this - if they do, it might be better for emissions to dray the cars to Richmond than to haul them out of Fremont on UP.
