If our country would wake up, there wouldn't be a passenger run long enough to need a diner. Leave that to niche markets of long-distance excursion trains where people with money and time to spare know what they are getting into.
Any logical traveler is not going to go by rail for anything over 500 miles. If you can't deal with that, it's time to set up a layout in your basement and run trains how you think they should be.
