As much as I like the concept of traditional railroad dining cars I'm afraid that their days are numbered for several reasons.
Labor costs are too high. It's impossible to pay a fair union scale salary with benefits and still keep meal prices reasonable for coach passengers and offer "free" meals for sleeping car passengers.
Crews that work several days on the road need hotels at the turn around point and that drives up the costs.
I really don't like the "Communal tables" where you never know who you end up sitting with.
Food isn't that great in dining cars anymore and crews that work long hours aren't always friendly
