Amtrak—-at least since the 1980s—-has never really had excellent food by any standards. The majority of food has been vacuum packed to Ready-To-Eat stuff simply heated in microwaves. Steaks were always frozen in vacuum pack wrappers, veggies were from a bag, the only real work a food specialist did was prepare salads and wash dishes, the chef was nothing more than a short order cook.
