Windowless 737s could also be for freight, though there are enough -400s retiring from passenger service that there's plenty of fodder for conversions right now. If they're new, they probably are for the military contracts.
As for the grounding, financial and air press has many items detailing the progress of the "reopening." Yes, there will be modifications needed, but the way should be clear to start making those and resuming deliveries/use by early next year. Resuming production of course will take longer - Boeing has to clear the employee parking lots of backed-up deliveries before they can get started with production again.
