On the Hoffsommer thing I didn't look past Pacific MAil
MOrgan Lines was another ship co, came to SP with Morgan's Lousiana and Texas. Look for "One Hundred Golden Hours at Sea" , descriptive brochure for the service between New York and New Orleans. Old maps will reveal "Southern PAcific Docks" on Manhattan. Morgan lines basically disappeared into the Merchant Marine/Navy in WW2
Most of those were built by Newport News Shipbuilding- a nother C.P Huntington company.
SP also owned Associated Oil, which ran tankers on the west coast
