Based on your arrival time, I am assuming you will be on #6. If on time, by the time you get a car and make the 1.25 hour plus drive, you will be in the Glenwood Springs area early afternoon. As mentioned before there will be shadow issues, but there are always shadow issues depending where you are in the canyon. With that in mind....

From west to east you could park and explore the hiking/biking trail from these rest areas:
No Name - This was already mentioned in one of the other posts. Shots from the parking area. WB trains are best here, but there are some broadside options too if you get a WB.

Grizzly - parking area and on the east end some photo ops. For the most part though, the trail is below the tracks or there are trees to deal with.

Shoshone is only an exit to the power plant and boat launch. There is only WB interstate access.

Hanging Lake - There are some water level shots avaiable here. Walking east will offer some options too. Only WB interstate access too.

Bair Ranch - Some chances if you were to walk east on the trail.

Dotsero Trail head - A quick walk on the trail under the interstate to the river will give you some shots, or a short climb up the hill at the parking area.

The bigger question is trains. There are the Amtraks, usually one BNSF manifest in each direction, some BNSF coal, an occasional oil train, UP's 6-day a week MRONY/NYRO, and UP coal trains. A lot more of the coal from the North Fork Sub is going west than east these days. But the trains east of GJ seem to be bunched so you either see a lot of trains, or you see Amtrak only.
