I believe to remember reading that the top level connection between New York and Los Angeles was via NYC (thinking of the Chief).

For a publicity stint, Grand Central with the stub end tracks was always better suited than Penn Station.

When it comes to business travel (on top level, allowed to take the premium train), the question is which station served more business centers with overnight trains. Overall, I am sure it was Penn Station, but the main destinations were not overnight destinations).
