Later in the week is usually busiest. Trains seem to come in bunches with no particular schedule other than the Oakland-Global 2 Z train pair. On a recent multi-day Truckee visit I saw 5+ in either direction between sunrise and 11am, a lull before #6, then the east fleet out of Roseville starts tipping over the hill late afternoon into the night. Westbounds come out of Sparks anytime from the afternoon on.
There is excellent ATSC server coverage Sparks-Verdi and Boca-Roseville which comes in handy. If you're just using a scanner you'll hear westbounds get warrants out of Sparks and eastbounds releasing/getting new ones between Switch 9 and Truckee.
