How about Rio Grande in Utah?

See, the original point of the Denver & Rio Grande was to connect Denver to (surprise) the Rio Grande. That plan kind of died when they lost the race for Raton Pass, so they turned west (though they did make it as far as Santa Fe, which is on the Rio Grande).

For that matter, how about ATSF in California and Chicago? By their name, they should have stopped at the Mississippi eastward, and at New Mexico westward. They made it to where their name said (which was fairly unusual), and then kept going by several hundred miles.
