Event recorders record nearly everything the locomotive does. Data can show nearly everything the Engineer does regarding the operation of the locomotive. AFAIK... The recorder on the cab car would only show what the cab car "sees," while the train is controlled from the locomotive, speed, brake pressure etc.. It would not show throttle position, whistle/bell use, etc..
