Searched ["Iron Horse" etymology]: [www.google.com]

The earliest mention I could find was "Iron horse "railroad locomotive" is from an 1839 poem." [www.etymonline.com], about 38% down the page.

Tried to find that poem -- ["Iron Horse" poem 1839] -- but couldn't. Closest I got was a citation from Minding the Machine: Languages of Class in Early Industrial America, by Stephen P. Rice; see it here: [books.google.com].

A bonus find from my search was Dow's Dictionary of Railway Quotations, edited by Andrew Dow: [books.google.com]. You may find it at Amazon or ebay.
