The eastbound "mega" unit trains have been empty grain, coal, and oil, as well as combinations of empty grain plus empty coal, etc. Two grain empties together averages 229 cars give or take; coal or oil empties doubled up will be more than that. There have also been doubled-up coal loads heading west. Not sure about grain.
As for the "what-ifs," one of the first trips with a double coal load reportedly faced a couple of drawbar/knuckle debacles en route. And as you put it, winter conditions will only add to the potential issues.
Mega-length trains have also been happening in the manifest and intermodal realm.
