I think the commuter traffic on the South end is on the Tri Rail (CSX) line that is West of the FEC and closely parallels I-95. There has been talk of running some Amtrak traffic between Jacksonville and W Palm Beach that would provide service to coastal cities like Daytona Beach, but there isn't a good track connection to the CSX line South of Palm Beach, where all the Amtrak stations are.

For all the family trips I make to Florida, I don't get many FEC photos. In the summer I've found I could catch some Northbound trains in the evening, but sitting and waiting for a train in Florida's summer is not lake waiting for a train in California! They move through pretty quickly.
