"The Train"

Last night I was watching that great movie, "The Train" once again, and with my limited knowledge of European steam locomotives I have a question. In several scenes of the locomotive cab the engineer or fireman is vigorously cranking a big handwheel especially, it seems, when they're preparing to depart. The wheel is above the firebox door. What is its function? Thanks for your help!
