Be aware that Amtrak's station in the Twin Cities is St. Paul. Will someone be meeting you at the Amtrak station. If not, there is a new light rail transit line linking St. Paul Union Depot with Downtown Minneapolis and other places in Minneapolis.

Since you will be boarding in Pasco, you will be riding the Portland section of the Empire Builder to Spokane where it joins with the Seattle section. The Portland section does not have a dining car, so you will need to either bring food with you for dinner or buy food in the lounge car.

If the Empire Builder is running on time, you'll want to get up very early in the morning for views of Glacier National Park. Eastern Montana and North Dakota are less scenic.
