To my knowledge there hasn't been any freight to or from Parkdale since the middle 1980s. Diamond consolidated their operations into Odell about 1984ish, which ended operations above the hardboard plant at Dee. This is what precipitated the local ownership group buying the railroad, they really only wanted the line above Dee for a tourist train but had to buy the whole line from UP.
Unless something's recently changed, the only freight shipper on the MH of any consequence is the Mount Hood sawmill. They're located across the valley from the railroad but load centerbeams at Odell. The LPG dealership at Pine Grove was a good customer for a lot of years but doesn't look like they have been active in at least 5-6 years now, maybe more. It would be interesting to know how much fruit MH moves, by the middle 1990s that business had declined from 150 loads a year to 6 or less. By far the best shipper on the road was the Dee plant, but it burned down in 1996.
