As others have mentioned, it's a steam generator car.

In November 1968 WP purchased three Heater Cars from the Great Northern Railway. The initial plan was to replace the F-units on the California Zephyr with freight units, which were much newer and thought to be more reliable. After trying U30B/Heater Car combinations with poor results, WP returned to using F-units. However, the Heater Cars proved to be very satisfactory, and one was often used with the Fs after that.

Amazingly, all three of the Heater Cars survive in 2008. Here's more info about them:
