Yep, you actually have a minimum set position, 4-6 pounds.... But, dragging the cut, either loaded or empties, on bad track isn't always the best idea either, as that indeed can cause a cut or train to string-line pulling on curves with real bad track, and pull the track even more out of alignment... Knuckles and drawbars a problem, not really, that's almost always too much power on heavy tonnage and/or a metal fatigue.... I would just slow way way down, and gently ride out the dips and twists... That way when it does derail you don't have as big a mess, and can pull it back on the rail fairly easily with "chunks"....
