Depends how broadly the UP filed the trademark application.
The majority of "Southern Pacific" related TM's apply to goods and services by common carriers e.g. railroads.

I doubt the Espee was ever in the standalone restaurant business.
And the UP surely isn't in the dinner train business these days, either. (Officer special trains notwithstanding.)

BTW, 'Southern Pacific Brewing' has been granted a trademark for beers, with the owner in San Francisco.
