Back in the 1950's when the Coast Daylight was 15-20 cars, they needed lots of seats in the dining cars to handle the lunch crowd. There wasn't much (any?) getting food and carrying it back to your (reserved) seat, and the Aplets and Cotlets sold by the news agent weren't enough for a meal...
