Not really familiar with any of those. Note that the only active traffic generator on the Ione Branch is a clay/rock pit complex just east of 104 at Michigan Bar Rd. - and there aren't many cars there in Google. While tracks continue into Ione (and even most of the way up to Martell on the former Amador Central), there's no traffic past the Michigan Bar pit. Google shows what's probably an end-of-track bumper about 2 units' length past the switch for the run-around track at the clay pit. So I would be surprised at more than twice/week traffic; probably more like once/week.

Have noticed that on the Folsom industrial track too - sometimes cars that are unloaded immediately on arrival (at the lumber yard at Sunrise light rail, for instance) sit for most of a week before they go away - UP doesn't visit often.

I think the Folsom Turn also goes farther west (south) - to P&G/Polk or maybe even farther - on the days it runs. Which aren't many unless the cement distributor at Jackson Hwy. is busy. Interesting little switchback industrial track at Brighton, but poor access for photos (beware the large homeless camp on the east side of the main line there, under the freeway) - and it hasn't been used except for odd storage items in a couple of years. Unfortunately for photos, the Turn usually (per RailroadRadio) seems to run late afternoon (just before or after commute time) or at night, though on rare occasions I've seen it from light rail during the day. At least on the Branch, it often seems to have a longer locomotive (2 big units) than the rest of the train (unless, again, the cement people are busy). If it runs while you're around, it might be worth a chase.
