Yes Steve, that's true, too. But, it is irrelevant to a discussion of "bottling the air", because that's not "bottling the air" is it?
So, as I said, if you want to understand how air brakes work and what can go wrong from "bottling the air", then watch the video. As Shortline Sammie, a real rail, said, it has a nice succinct description of how air brakes work, and I agree.
Of course, this is why the rules also require you to set sufficient hand brakes, what we call that a "heal" on a train or, cut of cars. So that when that "air" leaks of, usually over a period of a number of hours, when the "air" in the brake cylinder leaks off, and pressure reduces to the point it releases the air brakes, the train still stays put.
