If the V&T qualifies, so does the Sumpter Valley and Georgetown Loop. A line in Central City has come and gone a couple times, there is another effort. Como is slowly putting track back in.
The SD&AE line to the east keeps struggling to return from the dead, this is like the 3rd or 4th time since SP left.
Here's one I don't think was mentioned - wasn't part of the Santa Fe York Canyon Mine branch built on the former grade of the SP Dawson branch? And, will Tennessee Pass be resurrected? I think you could also add much of the former MILW in the west that is still in operation.
The CWW line from Walla Walla to Dayton had been closed for several years after Watco walked away from it and UP sold/gave it to the Port of Columbia. Likewise, the same operator has the WRL line from Othello to Royal City which belongs to the Port of Royal Slope and had been closed for several years. Part of the line is former mainline, but the line into Royal City itself was built in the 1960s.
