Maybe not the MOST SCENIC but still impressive:
1) eastbound SAN FRANCISCO (or CALIFORNIA) ZEPHYR crossing the Great Salt Lake with a background of snowy mountains to the east.
2) ADIRONDACK southbound from Montreal in the fall.
3) westbound SUNSET along the Gulf Coast through the various estuaries, bays, and inlets particularly when the weather is a bit foggy.
4) racing toward Trinidad, CO on the westbound CHIEF on a clear day with a view of the snowcapped Spanish Peaks to the west.
5) climbing into the Cascades south of Eugene, OR aboard the STARLIGHT.

Of course, #1 and #3 you cannot experience presently.

MOST SCENIC: westbound ZEPHYR for the first hour or two out of Denver climbing into the Front Range.
