I can't speak about the fields, but glyphosate is metabolized in soil rapidly. You can plant a food crop in the same field the next day. It has the advantage of being broad spectrum, "kills anything green and growing", but is not persistent. The one thing to avoid is getting it into watercourses, bad for fish. So don't spray when rain is predicted or rinse your equipment down a drain.
