This is just my opinion I can only say it works for me for scanning:
Use TIFF for capture (creating your digital negative) and JPEG for output (sharing your digital prints.)
A jpeg is a lossy compressed image, it has much less information in it than a non compressed TIFF. JPEG should be considerd as an output, not a capture, format. A 16 bit TIFF has a huge amount of information (and a huge file size.) There are 255 bits of data (per color channel) in an 8 bit (1 byte) file. A 16 bit image has 255 x 255 or over 65,000 individual units of information per color channel. This is also a big reason RAW is better.
Don't worry so much about how an initial TIFF looks looks on the screen. The histogram will show you where the light levels are. Unless your monitor is well calibrated it is not to be trusted. I use curves to adjust the levels and layers to balance the colors and density for highlights and shadows.
Then, I output as an sRGB, jpeg. CMYK (subtractive color) is only for paper output. It has 3 color channels and a Black (ink) channel (K is black). RGB (additive color) (Red, Green, Blue) is for computers, that's what you generally use. sRGB is a type of RGB color space (any more than that gets complicated.)
