I'd be uncomfortable with heating food in plastic containers, considering Bisphenol A among other things. I'd expect railroaders expose themselves to a lot of other chemicals so that it won't matter much in the big scheme of things. But melting plastic along with the food is still an "icky" thing to imagine. Pyrex glass or aluminum containers would work just as well, I suppose.
