From Zimmerman's Story of the California Zephyr page 46:

When the CZ was new, the diner was invariably manned by four cooks and six waiters, in addition to the steward. In later years, the kitchen staff was reduced by one and the number of waiters by two during the off season. The twelve crews, four from each railroad, would work full round trips from their home city - Oakland, Denver or Chicago - then lay off for an equivalent length of time.
