You added the caveat that we actually had to ride in the car, so I had to name three...
I had the opportunity to ride the two NYS&W cars on an excursion in the early 1990s, their ex-CB&Q "Twin Zephyr" dome parlor observation and their ex-UP "City of Portland" dome lounge observation with the theatre window in the rear (this is the car known as the "Popemobile"). The round trip ran on the Susquehanna's ex-EL Syracuse and Utica branches from Tully, on the Syracuse line, to Norwich on the Utica line.
The third car is the "James J. Gilmore" ex-SP parlor observation owned by the Northwest Rail Museum in Portland. This original "Daylight" car is a regular part of the consist for the annual "Holiday Express" trips sponsored by the Oregon Rail Heritage Foundation, and I've ridden it on several occasions while volunteering for the event.
